Our first Evening Chef In Residence was with Chef Tom Geoffrey of Barang Cambodian Street Kitchen in November & December 20923

Chef & founder of 'BARANG' , Tom Geoffrey joined us for a 6-week residency from the 16th November to 22nd December, where he showcased his Cambodian & Khmer inspired dishes.

Originally from Bristol, Tom Geoffrey is the founder of 'BARANG', a Cambodian inspired pop-up with a focus on Cambodian BBQ & regional Khmer dishes. 

Influenced by his previous trips to Cambodia and the street kitchens of Phnom Penh & Siem Reap, Tom's 6 week residency at South London Louie featured a menu balancing traditional Cambodian/Khmer flavours alongside the best seasonal produce from the UK. 

Tom spent the first half of 2023 working at Kiln in Soho, before making his debut at Meatopia Festival in the Summer. This was followed by pop-up collaborations in Bristol (Serena Appleby: Kring Kringz) & New York (Chakriya Un: Kreung Cambodia).

Hot, sour, salty, bitter & sweet flavours throughout the menu, punchy dipping sauces & aromatic/fiery curries. Tom's menu celebrates his passion for fire cooking & Cambodian BBQ, which includes smoked meats, grilled seafood & skewers.
